Pembuatan bir (bahasa Inggris: brewing, dibaca /bruwing/) adalah proses yang menghasilkan minuman beralkohol melalui fermentasi. Metode ini digunakan dalam produksi bir, sake, dan anggur. Pembuatan bir memiliki sejarah yang panjang, dan bukti arkeologi menunjukkan bahwa teknik ini telah digunakan di Mesir kuno. Berbagai resep bir ditemukan dalam tulisan-tulisan Sumeria. Tempat pembuatan bir dinamakan brewery (bahasa Inggris) atau brauerei (bahasa Jerman).

Semua bir dibuat dari malt. Malt ini, tergantung kebiasaan, dibuat dari bulir jelai, gandum, atau kadang gandum hitam. Malt dibuat dengan membiarkan bulir berkecambah, kemudian mengeringkannya di kiln. Proses perkecambahan menghasilkan beberapa enzim, terutama α-amilase dan β-amilase, yang akan digunakan untuk mengubah pati dalam bulir menjadi gula.
Malt kemudian dihancurkan dan dicampur dengan air panas dalam sebuah proses yang dinamai mashing. Mashing biasanya memakan waktu 1 sampai 2 jam, kemudian cairan yang dihasilkan dicampur dengan hop dan ragi. Setelah dibiarkan selama 1 sampai 3 minggu, bir kemudian disaring dan dikemas.
