MUKU LOTO

MUKU LOTO is a typical food of the Nagekeo area, Flores which is in the Province of East Nusa Tenggara. That said, Muku Loto has been around since the time of our ancestors, and is usually served at traditional events or big parties in Nagekeo, Flores.The name 'Muku Loto' itself comes from the local language, 'muku' means banana, and 'loto' means crushed.'Muku Loto' is a traditional dish which is a variant of a side dish that is always eaten with rice.

Muku Loto itself is very popular with the people of Nagekeo, because apart from its delicious and delicious taste. The raw materials for making this food are quite easy to obtain.

HOW TO MAKE MUKU LOTO

Muku loto itself is made from ingredients such as young bananas, banana stems and also beef or pork. To make this food, first peel the young banana on the outside, then cut it into small pieces with a size of approximately 3 cm. Bananas are boiled with beef offal. All the spices are added at once when boiled. When the bananas are soft, all of them are stirred (sesu) in a pan with young banana stems. Muku loto will thicken slightly. When the color has turned slightly gray, remove and ready to serve Finally, bananas and offal/beef or pork that has been finely chopped are boiled in a pan and stirred until the texture of the bananas and meat becomes soft and the color turns gray.

Apart from bananas, there is also the use of the inner banana stem. In white banana stems, the texture is softer like vegetables. This culinary is similar to culinary from the Sasak tribe, namely ares which is also made from the inner banana stem. The difference with ares is that muku loto is not only used as a vegetable dish, but also with added meat. Meanwhile, the spices are added when the ingredients are boiled. The ingredients are cooked until the color is soft, the water thickens and has a grayish color.
